LANGOUSTINES:
- 4 whole Langoustine
- 3 ½ Tbsp. butter
- Saltverk Birch Smoked Salt, to taste
RED ONION SALSA:
- Half of a red onion
- 5 stems of parsley
- 1 clove of garlic
- 1 ½ Tbsp. olive oil
- Zest and juice from one lemon
- 1 tsp white vinegar
- Saltverk Birch Smoked Salt, to taste
First, peel the langoustine tail, keeping head and claws on for aesthetics. Melt butter in a pan over medium-high heat and add langoustines to cook. Cook them for 15 minutes, turning regularly in the butter. Add a few pinches Saltverk Birch Smoked Salt when there are five minutes left in the cook time.
To prepare the salsa, fine dice the red onion, garlic, and parsley. Add the lemon zest and lemon juice, a drizzle of olive oil, a few pinches of Saltverk Birch Smoked Salt and white vinegar. Mix all together.
Serve the cooked whole langoustines with the red onion salsa on top or on the side and enjoy!
